Terroir: The vineyard covers 0.75 hectares in Pruzilly. The two plots are exposed to the South East and are at altitude. The soils are composed of gravelly sand on granite.
Aging: Aged for 18 months on the lees in oak barrels, then put back into the mass before bottling, no fining (suitable for vegans), and very light filtration before bottling (may present a slight deposit).
Vinification : Cold pre-fermentation maceration then temperature control during the fermentation phase at a temperature not exceeding 33°C. Pumping over and punching down during the maceration. At the end of the maceration (about 3 weeks), the grapes are pressed and the wine is put into oak barrels for the malolactic fermentation.
Age of the vines : On average 60 years
Tasting:
Eye: clear, ruby red color.
Nose: fresh red fruits such as strawberry, redcurrant accompanied by a peppery touch.
Palate: fine and structured by a still young tannin with a lot of depth.
