Terroir : From one of our most beautiful parcels of the Saint-Véran appellation named Les Cornillaux located at the entrance of the village of Leynes. Soil : Limestone and limestone with limestone characteristic of the appellation.
Aging : Aged for 18 months on the lees and then put back into the mass before bottling, no fining (suitable for vegans), and very light filtration before bottling (may present a slight deposit). The barrels used are top of the range, the wood has dried for 36 months (compared to 24 months on average), the toasting is very slow and gentle in order to support the wine and not to make it up.
Vinification : Fermentation in oak barrels by indigenous yeasts (100% oak barrels of which about 50% are new).
Age of the vines : On average 55 years
Tasting :
Eye: clear, light golden color
Nose : Intense aroma of juniper-type spices and yellow fruits (peaches, pears)
on a pastry background. As the wine is opened, the nose evolves on riper, exotic
riper, exotic fruits. Floral note of eucalyptus, note of liquorice.
Taste : Soft and full attack, nice length in mouth, rich, minerality
saline.
