Terroir : From one of our most beautiful parcels of the Pouilly-Fuissé appellation named Les Crays located in Solutré-Pouilly, on the back of the Solutré rock, benefiting from a full southern exposure. The soils are made of old marl with entroca.
Aging : Aged for 18 months on the lees and then put back into the mass before bottling, no fining (suitable for vegans), and very light filtration before bottling (may present a slight deposit). The barrels used are top of the range, the wood has dried for 36 months (compared to 24 months on average), the toasting is very slow and gentle in order to support the wine and not to make it up.
Vinification : Fermentation in oak barrels by indigenous yeasts (100 % oak barrels of which about 75 % are new.
Age of the vines : 65 years
Tasting:
Eye: clear, light gold color.
Nose : buttery, spicy, slightly iodized, toasted, light aromas of ripe citrus fruits.
Palate : very fat and very long, toasted and roasted on the end, very buttery, well balanced by the mineral salinity.
