Food and wine pairing : Fish, shellfish, poultry, goat cheese
Terroir : All the plots are located in the commune of Solutré-Pouilly. The vines draw their minerals from the deepest part of the marl of old limestone, the same limestone that constitutes the Roche de Solutré. The resulting wines develop a skilful blend of exotic fruit and mineral aromas.
Aging: Aged for 11 months on the lees, then put back into the mass before bottling, no fining (suitable for vegans), and very light filtration before bottling (may present a slight deposit).
Vinification : Fermentation in oak barrels by indigenous yeasts (100% oak barrels of which about 25% are new).
Age of the vines : On average 50 years

Tasting :
Eye: clear, light gold color
Nose : buttered pineapple aroma, slightly grilled, very mineral
Palate: rich, fat, juicy, full of fruit, very long with a nice salinity. Buttered and toasted at the end.
